St. Kilian - Signature One - Single Malt - 45%

This is the first "official" Whisky from the most promising German distillers on our screening list, which already gained a huge fan base in Germany by constantly releasing work in progress batches which were matured in a variety of casks.

Nose

Green fruits, as there are fresh cut granny smith apples and pears, plus some bison grass and a slight woodruff note. There is also marzipan, which seems to be a distinctive sign of St Kilian. We found it in every Pre-Whisky batch we tried up to now. It has a little metallic note which is likely due to the young age. All in all a very fresh profile. Without knowing that it's from Germany, we would directly classify it into the speyside region.

Palate

We have a bitter sweet entrance with a light body and creamy texture. Hazelnuts mixed with green sour apples. Some drops of Manuka honey and a few lime zests.

Finish

Medium, with a gentle bitterness of lemons and crushed apple seeds.

Rating

We see this as a "while we wait" Whisky and a pleasant milestone in the just beginning history of this lovely german distillery. Regarding complexity there is definitely room for development, but for the young age it's very well done and makes you curious for the next level (especially the peated one).
